A smiling Mom walks out of a food bank with a container full of newly harvested carrots, onions and greens for a planned dinner soup, a senior is thrilled with a few Jersey tomatoes for a fresh salad and a beaming child clutches a bag of apples for his school snack.
For many of us, it’s hard to imagine what a treasure a fresh cucumber, a few green peppers and a ripe peach might be.
At a time when great emphasis has been placed on developing healthy eating habits we found in our volunteer work at a local food pantry that it just wasn’t within the budgets of many of our clients to include wholesome fruit and vegetables in their diets.
There seemed a simple solution. Create a transport bridge between the abundance and generosity of our local farmers and our local at-need population. However, simple solutions are not always easy solutions. Through hard and dedicated work on the part of Cathy Snyder and her corps of volunteers, that bridge has been established. Rolling Harvest now provides that passage from the farms to the tables of those who are most in need, servicing food pantries, senior centers, churches and community outreach programs.
