I’ve known Cathy Snyder for almost five years, since she first decided to step into the food waste stream and do whatever she could to divert some of it to hungry people.

While shopping at her local farmer’s market one day after volunteering at a food pantry, Cathy Snyder cooked up a delicious idea to end hunger in her area.

Famous for its $4.95 chocolate bars and high-end lattes, the Lambertville Trading Co. coffee bar had a line snaking out the door in Lambertville, N.J., last week, a short walk east across the Delaware River from New Hope, Bucks County.

In 2009, Rolling Harvest Founder and Executive Director Cathy Snyder was regularly volunteering at her local food pantry in Lambertville, New Jersey when she took a trip to the New Hope Community Farmers Market to stock up on farm-fresh goods for her family. A light bulb went off.

We live in a county that has much to offer. Rich farmland, comfortable housing, good food and innovative chefs, artisanal ice cream and cheese, tasty meat and beautiful vegetables and fruits. Fortunately, we also have hard-working people who recognize that not everyone in Bucks County can afford to partake in this bounty.

When I was ordering seeds and scheduling my plantings last winter, it never occurred to me that I might grow more than I could sell. And yet it happened.

It’s been almost three years since Cathy Snyder, a Lumberville mother of two college-age children, started canvassing Bucks and Hunterdon farms in the massive Ford Excursion that she won, gleaning leftover produce to supplement the too-often lacking pantries and shelters.
