Cabbage Apple Slaw

Ingredients
  

  • 2 cups cabbage red or green – shredded or thinly sliced
  • 1-2 apples green or red – cut into matchsticks
  • 2 carrots – grated
  • 3 green onions – sliced
  • 2 TBSP oil
  • 2 TBSP apple cider vinegar
  • 1 TBSP maple syrup / honey
  • 1 lime – juiced
  • ¼ tsp mustard
  • salt and pepper to taste

Instructions
 

Salad Directions:

  • Shred the cabbage, grate the carrots, slice the scallions, cut apple into matchsticks
  • Add all ingredients to bowl
  • Toss together well

Dressing Directions:

  • Add to a glass jar with a lid:
  • Oil, apple cider vinegar, maple syrup or honey, lime juice, mustard salt/pepper
  • Shake jar until well mixed
  • Add dressing to salad and toss until coated
